Properties: White monoclinic crystals or crystalline powder. Odorless and slightly sweet. It melts and decomposes at approximately 185ºC. Stable in crystalline state. It is unstable in the presence of acid, alkali or hot water and can be hydrolyzed into L-glutamic acid. It is soluble in water (4.25g/100ml, 25ºC), and almost insoluble in ethanol and ether. The aqueous solution is acidic. It belongs to non-essential amino acids.
Usage: Nutritional supplement, flavoring and aroma enhancer

1. The strengthening process and processing equipment must be practical, accessible and cost-effective to ensure that the nutrients to be strengthened can be smoothly added to the food

2. The wider the consumption coverage of carrier foods is, the better (especially among rural and poor groups where nutrient deficiency is most common), and such foods should be industrially produced. The consumption of carrier foods should be relatively stable so as to calculate the amount of nutrient addition more accurately and avoid excessive intake (such as soft drinks and snacks).

3. The enhanced processing flow does not change the original sensory properties of the food, and there is no significant loss of nutrients during further cooking and processing.

4. The strengthening techniques and methods should be determined based on the type and nature of the product. For instance, in the case of flour fortification, the spray method or direct mixing method is adopted. First, the nutrient fortifier is made into a base material with a relatively high content, and then the base material is evenly mixed with hundreds of times the amount of ordinary flour. For the fortification of instant noodles (fried), nutritional fortifiers (such as fat-soluble VA, VD, VB, water-soluble VB1, VB2, VC, niacin, minerals, etc.) can be added to various seasoning packets.

For the fortification of dried noodles, the nutrient fortifier can be processed in the center of the noodles (like a pencil lead wrapped in the middle of a pencil), and the loss of nutrients during cooking will be significantly reduced. For instance, some vitamins are fat-soluble, which limits their application in hydrophilic systems. Modern technology can be used to make them into water-diffusible types, further expanding their application range.
