Liquid products are generally viscous, and their color and transparency will vary depending on the degree of hydrolysis and the presence of other additives.

  • Solubility: Hydrolyzed beef protein has good solubility in water and can quickly dissolve to form a transparent or slightly turbid solution. This is because the hydrolysis process turns the originally large-molecular beef protein into smaller peptides and amino acids, increasing its hydrophilicity. It can also maintain relatively good solubility under acidic and alkaline conditions, but its solubility in some organic solvents is poor.
  • Stability: It is relatively stable under normal storage and use conditions. However, under high-temperature, high-humidity or extreme pH value environments, a certain degree of degradation or deterioration may occur. For example, being exposed to a high-temperature environment for a long time will cause some peptide bonds to break further, affecting its nutritional value and functional properties.
