Molecular Structure

  • As a polyol, glycerol contains hydroxyl groups (\(-OH\)) as functional groups. The three carbon atoms in its carbon chain are each bonded to a hydroxyl group: the middle one is a secondary alcohol hydroxyl group, and the other two are primary alcohol hydroxyl groups. All atoms are connected by single bonds, and the molecule can form various stable conformations by rotating the O-H bond.

Chemical Properties

  • Etherification Reaction: It can undergo cyclization with various alkylating agents to form aliphatic and aromatic glycerol ethers.
  • Cyclization Reaction: Reacts with aldehydes or ketones to form cyclic acetals and ketals.
  • Esterification Reaction:
    • Esterifies with saturated/unsaturated fatty acids to produce glycerides.
    • Reacts with inorganic acids to form mono-, di-, or triesters.
  • Substitution Reaction: Hydroxyl groups are easily substituted by halogen atoms from halides (e.g., hydrogen halides) to form halides, with the hydroxyl groups at positions 1 and 3 being more reactive.
  • Transesterification Reaction: Reacts with triglycerides to produce fatty acids and mono- or diglycerides.
  • Dehydration Reaction: Dehydration occurs at 180°C. In the presence of sulfuric acid, intermolecular dehydration yields glycerol ethers, while intramolecular dehydration yields acrolein.
  • Oxidation Reaction: It does not oxidize in air under normal conditions but is easily oxidized by other oxidants.
    • With weak oxidants, only one hydroxyl group is oxidized to form glyceraldehyde.
    • With strong oxidants, it is oxidized to 2-hydroxypropanoic acid.
  • Reaction with Bases: The three hydroxyl groups influence each other, allowing slight dissociation of hydrogen atoms in the hydroxyl groups, giving glycerol weak acidity. It reacts with alkaline hydroxides to form alcoholates (e.g., bright blue copper glycerolate with freshly prepared copper hydroxide).
